Salmon Potato Cakes

Growing up, I always looked forward to my granny’s fried potato cakes and salmon patties. That’s what got me thinking…why not put the two together.

1 c cooled mashed potatoes
8 oz smoked salmon
1 tsp parsley
1 tbsp rosemary
.5 c bread crumbs
.5 c panko crisps
.5 c shredded parmesean
.25 c white win
1 tbsp olive oil

In a large bowl, mix all ingredients together, except the olive oil.

Once ingredients are thoroughly combined, begin to patty out the mixture. Patties should be a small palm size.

In a large skillet, heat the tbsp of olive oil. Fry the patties for about 8-10 minutes per side. Try not to overcrowd the skillet; the potato cakes will not cook correctly.
